Tomorrow is Shrove Tuesday, also known as Pancake Day!
I’ve always loved pancakes. I remember when we were younger my Dad would make pancakes for me and my brothers. The three of us would have a competition to see who could eat the most, and would normally get through seven or eight each! I can’t eat quite so many now, but I still love them.
I think one of the things I have always loved about pancakes is their versatility. They can be eaten filled with cream or jam, syrup or chocolate, or even savoury fillings! I think my favourite way to eat them is simply with a sprinkling of brown sugar, yummy!
These particular pancakes were made by Appi last night, and I think he did a better job of it than I normally do! Mine often seem to end up slightly odd shapes, though they still taste good!
Pancakes are super simple, quick and dead easy to make. Give it a try!
Pancakes
Makes about 6 servings depending on the size you make them.
Ingredients:
2 eggs
6 tbsp flour
Milk
Butter/oil/lard (whatever you prefer)
Method:
In a bowl beat together the eggs and flour.
Gradually add milk, beating into the mixture and trying to avoid lumps! You want to get the mixture quite thin, but not too thin! Think somewhere around the consistency of runny cream, a little thicker than milk.
Heat a frying pan and add butter/oil/lard. Heat until slightly smoking. I normally drain off any excess fat into a mug at this stage, to add in as and when I need it.
With a ladle (or just throw it in, whatever) measure out some pancake batter and pour it into the pan. Tip the pan to get the batter into a nice thin layer on the pan.
Let it cook for about a minute. When it’s ready to turn it should start to come away from the pan at the edges. Using a spatula gently lift the pancake and see if it’s nicely browned. If it is, then turn it over and let it cook the other side. If you’re feeling confident you can try the old throw-and-catch method of flipping, but I will not be held accountable for pancakes that end up broken/stuck to the ceiling/covering the floor/on your head!
Once the pancake is nicely browned on both sides, it’s done! Slide it out of the pan and give it to the first hungry mouth that wants it, or put it on a plate and cover with foil to keep warm whilst you cook the rest.
Serve warm.
If the batter is more than you need, you can keep it covered in the fridge for a day or so, possibly longer, to make as and when you like. Or you can cook it all up and then store the pancakes for later use (they can be reheated in the microwave). Cooked pancakes will keep for a few days if not eaten! I would just keep them in a pot on the counter or in a cupboard. You can store them in the fridge but they may go a little… stuck together.
